Vineyard	The grapes come from several steep hills around Auen, with clay soils, shales and layers of eroded sand.
Harvest	Manual and graduated harvest at the end of October
Vinification	24 hours of maceration followed by slow and delicate pressing of the grapes. Subsequent spontaneous fermentation in stainless steel tanks and wooden barrels where it ages for 9 months.
Wood education	A part ages in 500 liter barrels for a period of 9 months.
