Vineyard	This best vineyard in Auen, oriented to the south and located at an altitude of 277-300 meters, is owned by the Hees family. The soil is composed of a mix of sandy and gravelly clay with shale.
Harvest	Manual and staggered harvest at the beginning of November
Vinification	Maceration for 6-12 hours followed by slow and delicate pressing of the grapes. Subsequent spontaneous fermentation in stainless steel tanks and wooden barrels where it ages for 10 months.
Wood education	A part ages in wooden barrels for a period of 10 months.
