Vineyard	Edelschuh has existed since 1322. The terrain contains red and blue-black slate, at 460-530 meters above sea level, with an inclination ranging from 65% to 81%, among the steepest in Europe. In fact, it can only be operated manually and, sometimes, even with the help of a cable system.
Harvest	Manual, selective, very late but without the presence of botrytis. Vinification: Gentle pressing of the grapes. After a few hours, pressing of the whole grapes followed by spontaneous fermentation in used 500 liter barrels.
Vinification	18 months on the yeasts in used 500 liter barrels
Wood education	18 months on the yeasts in used 500 liter barrels
Taste impression	Yellow stone fruit, a touch of mandarins, delicate wildflower honey. Juicy and subtle nuances of pineapple and passion fruit, very precise and pure in texture, it closes with a long and persistent finish.
