| Vinification | Careful selection of grapes which are stored at very low temperatures for 24 hours. Maceration and fermentation in new French oak barrels for 40 days at a controlled temperature of 20°C with regular pressing and pumping over. Malolactic fermentation follows in French oak barrels for 32 days at 22°C. |
