Jerez La Barajuela 'Cortado' 2018 Luis Pérez

Historically, full-bodied organic wines that began to develop an oxidative character were separated by drawing a line on the barrel – essentially cutting with a line (palm), hence the term “cortado” (cut). These wines always came from the warmest areas of the best soils. Cortado La Barajuela, made with a selection of palomino fino, is an attempt to recreate this ancient type of wine, which had almost disappeared due to the industrialization of wine production in Jerez and the loss of historic vineyards due to phylloxera. Cortado is harvested in mid-September and the grapes are left exposed to the sun for two days before being pressed and fermented. It matures for up to 4 years in barrels previously used for sherry and then bottled.
