Vinification	Dopo la raccolta manuale, l'uva viene trasportata in cantina in cassette da 20 kg tramite trasporto refrigerato. I grappoli migliori vengono diraspati e sottoposti a una macerazione di 10 ore. Le uve vengono poi pressate sofficemente a una temperatura di 10°C e sottoposte a fermentazione alcolica a 15°C. Le varietà vengono mantenute separate sui lieviti fino al momento dell'imbottigliamento, con regolari batonnage.
