Harvest Manual
Vinification Careful selection of grapes upon arrival. Each grape variety is vinified separately. They are first frozen with carbonic snow and then gently pressed. After a few hours of maceration, an excellent extraction of terpenes (flavors) is obtained. Fermentation then follows for fourteen days at a controlled temperature of 16°C. Subsequently we proceed with fermentation in European oak barrels for fourteen days at a controlled temperature of 16°C
