It all started with a counterintuitive idea in a garage in San Sebastian under the slogan “Fermenting impossible dreams”. And those dreams turned out to be complex but grand, resulting in Ama Brewery now being internationally renowned for its innovative creation: pét-nat tea. This unique beverage combines low alcohol levels with a light sparkle and a complex flavour, perfectly tailored to modern demand. It also fulfils a long-cherished wish for us to be able to offer you a world-class low-alcohol alternative. Brewing Ama pét-nat tea is the result of a passionate process, carried out by a team of refined (former 2-star) chefs, artisan winemakers, scientists, craftsmen and tea expert Henrietta Lovell.

The quest for taste is at the heart of Ama’s mission. In their pursuit of top quality and pleasure, they offer an alternative, refined and low-alcohol option. Complex, elegant and terroir-driven, making it ideal as an aperitif, in cocktails or as a tasty accompaniment to a meal. The drink is made with high-quality teas and herbs, brewed with pure Basque mountain water that has an exceptionally low minerality. The symbiotic culture of bacteria or yeasts, known as SCOBY, facilitates the fermentation process and transforms the infusion into an elegant drink.

This is how craftsmanship meets chemistry at Ama Brewery, where the Basque passion for the land and Mother Nature is deeply rooted. The water for the teas and herbs undergoes a slow filtration of 27 years before emerging from the Alzola spring water supply. The Rare Tea Company’s teas and herbs are infused with precision, creating varietal differentiations comparable to fine wine or quality sake. The term ‘Ama’ means mother, and brewing Ama pét-nat tea involves using a small amount of kombucha starter from a previous batch. The drink is bottled and marketed after a minimum of six months of bottle maturation, resulting in slightly sparkling, richly flavoured and elegant drinks with a unique character.
